I’ll be the first to admit that I get a hankering for good Mexican food about twice a week. But frequenting my favorite Mexican restaurant to satisfy all of those cravings isn’t exactly easy on the wallet (or the waistline!). So when I’m wanting some sizzling carne asada, melty quesadillas, or perfectly charred street tacos, I just head out to my back porch and uncover the griddle.
Whether it’s Taco Tuesday or just a random weeknight, you can use the Blackstone griddle to cook up restaurant-quality Mexican dishes right in your backyard. From seared meats to sautéed veggies and fresh tortillas, let’s dive into some delicious griddle-cooked Mexican food that’ll have your taste buds doing the salsa!

Griddle Fajitas
Fajitas are probably one of the most popular Blackstone griddle recipes – right up there with cheesesteaks, fried rice, and anything breakfast-related. And for good reason!
The large flat cooking surface of the griddle allows you to spread out your meats, bell peppers, onions, and other fajita-style vegetables to get a great sear. And you can make a big batch to feed a crowd for your fiesta!
Chicken Fajitas on the Blackstone
If you’re looking for an easy, flavorful meal to feed a crowd (or to meal prep for the week) then these Blackstone chicken fajitas are a must-try! We first made these chorizo breakfast tacos on the portable Adventure Ready Blackstone on a trip to Texas, and we loved them so much that we’ve made them multiple times since! With just a few simple ingredients, these breakfast tacos are perfect for campsite cooking or a Saturday morning breakfast to kick off the weekend!

Mexican Breakfast Bowls
We call these breakfast burrito bowls because they have sunny side up eggs on top, but these Mexican style bowls make a hearty and delicious dinner, too! With a base of chorizo potatoes and a layer of carne asada and fajita vegetables, these bowls are the perfect griddle recipe!

Biscuit Breakfast Tacos
This recipe is a fun one – and it uses canned biscuits, so it’s super easy!
Obviously the griddle isn’t great for baked goods because it doesn’t have 360 degree heat like an oven. But you CAN prepare flatter bread products and doughs on the griddle, like these homemade english muffins or this griddle naan. So that gave us the idea to “smash” canned biscuits to make breakfast biscuit tacos! Just add scrambled eggs, cheese, and your favorite breakfast meats.
