French fries are a classic side dish, especially when served alongside smash burgers or cheesesteaks. And while hand-cut potatoes are a fantastic choice for the perfect fries, most of us just don’t have the time for all of that prep work.
Not to mention, frozen french fries are just as good… especially when cooked to perfection on the griddle! With these easy tips, you’ll have delicious griddle french fries in under 15 minutes!
Why You’ll Love Making Blackstone Frozen Fries
- Shallow fry on the griddle – You can cook the fries in a bit of pooled up oil to shallow fry them for extra crispiness, more like your favorite fast food fries.

What type of french fries can you make on the Blackstone?
Any type of french fries that you can bake in the oven or deep fry in a pot can also be cooked on the griddle. We’ve done everything from frozen steak fries to fast food-style crispy french fries to homemade potato wedges!
Fast Food-Style Frozen French Fries
The thin and crispy fast food style frozen french fries are perfect for cooking on the griddle, because the thinner shape helps them cook more quickly. Because a griddle doesn’t deliver top end or 360 degree heat (unlike an oven or deep fryer), then the smaller size of these frozen french fries is ideal for cooking on the Blackstone.

Frozen Steak Fries
Frozen steak fries are some of our favorite Blackstone french fries to make, because the flat two-sided shape of the fries are perfect for griddle cooking. With steak fries, you can easily flip the french fries from one side to the next, ensuring that the fries are perfectly crispy on both sides.
Steak fries are a great choice if you’re making loaded fries on the griddle, because they stand up to the weight of the toppings better also – just like for these Philly Cheesesteak Fries!

Homemade Potato Wedges
You may not consider hand-cut potato wedges to be “french fries”, but after ordering the most delicious bacon cheese fries from Texas Roadhouse, we decided to make these cheesy bacon potato wedges on the griddle.
For the best Blackstone potato wedges, you can parboil the potatoes so that they cook more quickly on the griddle. Then, toss in some flour to help the potatoes get nice and crispy, and cook on the griddle in a bit of high-heat cooking oil or bacon grease.

Other Griddle French Fries
Other types of french fries, like waffle fries or curly fries, can also be cooked on the Blackstone, but they may require a bit more time to cook evenly because of their shapes. The same cooking method applies – add oil, lay the french fries on the griddle in a single layer, and cook until golden brown and delicious!
What You Need for the Best Blackstone French Fries
- bag of frozen french fries – Choose your favorite brand and variety – steak fries, curly fries, waffle fries, crinkle cut fries… they’ll all work on the griddle!
- good high-heat oil or fat for frying – You can use pretty much any good frying oil including canola oil, vegetable oil, avocado oil, bacon grease (or Bacon Up), lard, or even beef tallow.
- salt or your favorite french fry seasoning – You can use an all-purpose seasoning, a parmesan garlic blend, seasoned salt, or even a Mexican seasoning like we did for this California Burrito recipe.
How to Cook French Fries on the Blackstone Griddle
Making french fries on the Blackstone is incredibly easy to do, so it’s the perfect griddle side dish to serve alongside your favorite sandwiches! Here’s a step-by-step guide to the perfect crispy griddle fries:
Step 1: Preheat the griddle and add oil.
Heat your Blackstone or other griddle to about 375-400°F. The actual knob setting will vary based on what griddle model that you have, but this will probably be a medium heat.

When the griddle comes up to temp, add a good amount of your favorite frying oil. You’ll need enough oil to shallow fry the frozen french fries – probably about 4-5 tablespoons depending on how many fries you’re cooking.
*TIP – If your griddle has a leveling feature, then you may want to adjust that so that the oil pools up in a corner of the flat top grill instead of running straight into the grease trap. This is why I prefer to keep my griddle surfaces slightly un-level, and I can scrape the grease into the grease trap myself.
Step 2: Add the french fries to the griddle in an even layer.
When the oil is hot (only takes a few seconds), add the frozen french fries in a single layer so that each fry comes in contact with the hot cooking surface.
I suggest adding a handful of fries at a time, instead of just dumping the entire bag on the griddle all at the same time. Depending on what griddle you have, the large amount of frozen food piled on at once may cause the griddle top to warp, and you don’t want that.

*TIP – As you’re adding the frozen french fries to the griddle, be careful because the oil tends to spatter upwards and could burn your hand. You can use tongs to add the fries to the oil if you wish.
Step 3: Cook and turn the french fries.
Let the fries cook undisturbed for the first 4-5 minutes. This allows them to start thawing and form a crispy crust on the bottom.

Then after 4-5 minutes, use tongs or a spatula to flip the fries. Stir and spread them out again for even cooking. Continue cooking for an additional 6-8 minutes, turning them a few times until they reach your desired level of crispiness. *My french fries took a total of 11 minutes to cook from start to finish (not including the griddle preheat time).
Step 4: Drain and season immediately.
When the fries are done to your liking, transfer them to a large bowl or plate lined with paper towels. Toss the fries a few times so that the paper towels can soak up the excess oil.

Then, immediately season with salt or your favorite french fry seasoning. Some of our favorite french fry seasonings include:

- Cajun seasoning
- Cavendar’s All Purpose Greek Seasoning

Ingredients
- 1 bag frozen french fries

- Once placed in a single layer, allow the french fries to cook undisturbed for about 4-5 minutes. When a slight golden brown color develops on the first side, use your spatula to flip and turn the fries. Continue cooking for an additional 6-8 minutes, turning the fries a few times until they reach your desired level of crispiness.
- Transfer the crispy fries to a large bowl or plate lined with paper towels. Toss the fries a few times so that the paper towels can soak up the excess oil.
- Immediately season with salt, seasoned salt, or your favorite french fry seasoning.
- Serve the griddle french fries hot with ketchup or your favorite fry dipping sauce.
Notes
- If your griddle has a leveling feature, then you may want to adjust that so that the oil pools up in a corner of the flat top grill instead of running straight into the grease trap. Then you can use your scraper to direct the oil to your french fries on the griddle as needed.
- Experiment with different seasonings like all-purpose seasoning, seasoned salt, parmesan cheese, Cajun seasoning, or your favorite Mexican seasoning.
