These cheesesteak fries are made with thinly sliced steak, sautéed peppers and onions, a 3 ingredient cheese sauce, and frozen french fries. If you love Philly cheesesteaks, then try this easy loaded french fry recipe!

Philly cheesesteaks are one of the most popular griddle recipes to make on the flat top grill. But every now and then, we like to switch things up and incorporate the idea of the iconic Philly cheesesteak into other recipes.

When it comes to steak, cheese, and sautéed onions and peppers, the possibilities are pretty much limitless. We’ve made cheesesteak quesadillas, cheesesteak taquitos, cheesesteak omelettes, and even smashed Philly cheesesteak tacos.

But it doesn’t get much better than piling your favorite steak sandwich toppings high on a bed of perfectly crispy loaded french fries!

What steak should I use for Cheesesteak Fries?

Ribeye steak is traditionally used for Philly Cheesesteaks, but we used Denver steaks for our cheesesteak fries. Sirloin, New York strip, or other tender cuts would also work great for this recipe. Use whatever tender cut of steak you have on hand or what you can find on sale.

What type of fries work best for loaded french fries?

Any time that we make loaded french fries, we prefer to go with frozen steak fries. Not only is a frozen bag of french fries convenient and inexpensive, but the steak fries are thicker and sturdier than most others so they hold up to the weight of the cheesesteak toppings.

Also, if you’re cooking your french fries on the griddle, then the flatter shape of the steak fries crisps up more evenly on the flat top grill surface when shallow frying.

Toppings for Cheesesteak Fries

Other than the most obvious ingredients, steak and cheese, the toppings for your loaded steak fries are largely based on personal preference. Here are our suggestions for how to top your french fries:

  • sautéed bell peppers and onions
  • banana peppers – We love adding banana peppers to cheesesteak sandwiches, loaded fries, and pizza!
  • sautéed mushrooms
  • pickled jalapeños – Great if you like a spicy kick! The brininess of the pickled jalapenos also adds a nice bit of tang to the otherwise rich, cheesy dish.
  • chopped cooked bacon or bacon bits
  • garlic aioli
  • hot sauce
  • crispy fried onions or onion straws
  • ranch or blue cheese dressing
  • sliced green onions or chives – Adds a nice bit of freshness and colorful garnish.

How to Make Cheesesteak Fries

Cook the Frozen Steak Fries

Since the french fries will take the longest to cook, start with those first. Add a few tablespoons of high-heat cooking oil to the heated griddle surface. This will help “shallow fry” the fries so they get nice and crispy.

Then, add the steak fries to the griddle. Arrange them so that they’re in an even flat layer, just like you would if you were baking them on a cookie sheet in the oven.

*TIP – If you prefer, you can cook the french fries in the oven according to package instructions.

Make the Cheese Sauce

The easy 3 ingredient cheese sauce is the same as the one that we used for these fantastic Cheesesteak Smash Tacos.

To make the cheese, start by warming the half and half or heavy cream in a saucepan until just before boiling. Then, add the American cheese slices and freshly grated cheddar. Mix well until the cheese is melted, and that’s it! You’ve got a delicious homemade cheese sauce that is WAY better than “the Wiz” – don’t tell my Philly friends I said that!

Tip for Cheese Sauce

If you don’t want to make your own cheese sauce, then you can substitute Cheez Whiz. However, I recommend heating it in a small saucepan with a bit of half & half.  Mix the cream and Whiz together well as the cheese is melting.  This helps to thin out the Cheez Whiz a bit so it does not overpower the taste of the steak.

Sauté the Peppers and Onions

While the cream for the cheese sauce is warming, sauté diced bell peppers and onions. If you’re adding mushrooms or other veggies to your loaded french fries, then go ahead and cook those as well.

Sear and Slice the Steak

Next, it’s time to cook the star of the show, the steak!

Heat your griddle or skillet to a high searing temp of about 425-450°F. Then, place the seasoned steak on the griddle and cook on the first side until about halfway cooked through. The cooking times will vary based on the thickness of your steak and the temperature of your griddle, but this should take about 3-4 minutes.

Then flip to the second side and continue to cook until almost done to your liking. Transfer the steak to a cutting board to rest for about 5 minutes. *NOTE – Don’t cook the steak all the way through, because it will continue to cook later with the sautéed vegetables and melted cheese.

After the steak has rested, slice it very thinly against the grain. Then add it back to the griddle to cook with the peppers and onions until the steak is done to your liking.

Build Your Cheesesteak Fries

Mix the sautéed veggies and tender steak slices together, and then top with a few slices of provolone cheese. Yes, these are cheesesteak fries after all, so we made them extra cheesy with 3 different types of cheese!

If needed, place the saucepan of cheese sauce back on the griddle to warm it back up, stirring occasionally until fully melted.

Then, transfer the cheesesteak mixture to the top of the crispy steak fries. Drizzle on some of your homemade cheese sauce, and these delicious loaded cheesesteak fries are done! We prefer to top our cheesesteak fries with pickled jalapeno slices and banana peppers. The extra spice and acidity pairs perfectly with the rich and creamy cheese.

Ingredients
  

  • lb tender cut of steak like ribeye, sirloin, New York strip, chuck eye steak, or Denver steak
  • ½-1 tablespoon Worcestershire sauce *To be used as a binder when seasoning the steak.
  • all-purpose seasoning of your choice *We used Shake That All-Purpose Seasoning, or substitute salt and pepper.
  • 2-3 tablespoons high-heat cooking oil *For shallow frying the french fries on the griddle. If cooking the fries in the oven, you can omit the oil.
  • 28 oz bag frozen steak fries
  • ½ cup half and half
  • 3 slices American cheese
  • 4-6 oz sharp cheddar cheese freshly grated
  • ½ medium yellow onion diced
  • 1 green bell pepper diced
  • salt and pepper *Or substitute your favorite all-purpose seasoning for french fries
  • 2-3 slices provolone cheese
  • banana peppers, jalapeno slices, ranch dressing, or your favorite cheesesteak or loaded fries toppings

Instructions

  • Preheat the griddle to about 375-400 degrees F. For stovetop cooking, heat a large skillet over medium heat.
  • While the griddle is heating up, add about 1 teaspoon of Worcestershire sauce to each steak as a binder. Then season all sides of the steaks with your all-purpose seasoning or a simple blend of salt and pepper. Set aside while you start the cheese sauce.
  • Add ½ cup of half and half to a small saucepan over medium heat. Heat until just before boiling.
  • While the half and half is heating up, add about 2-3 tablespoons of high-heat cooking oil to the griddle surface and spread it around with your spatula. Add the frozen french fries to the oiled surface, tossing them so that the fries are coated in the oil. Then, spread out the fries in an even layer to start cooking on the first side.
  • When the half and half is warm, add American cheese slices and shredded cheddar. Stir well until the cheese is melted and fully combined with the half and half. Set the cheese sauce to the side.
  • When the steak fries develop a nice golden color on the first side, flip to the second side. Season the french fries with salt and pepper and continue to cook, tossing periodically, until crispy and done to your liking. *If needed, you can add more oil to the griddle surface for more of a "shallow fry". When french fries have about 5 minutes left of cooking time, move them to the side of the griddle to continue to cook and make room for the steak.
  • Adjust one burner of the griddle up to about 425-450℉. Place the steak on the hot griddle surface and cook on the first side until about halfway cooked through (approximately 3-4 minutes depending on your steak thickness and griddle temp). Then flip to the second side and continue to cook until almost done to your liking. Transfer the steak to a cutting board to rest for about 5 minutes. *NOTE – Don't cook the steak all the way through, because it will continue to cook later with the sautéed vegetables and melted cheese.
  • When fries are done cooking, transfer to a large serving platter or individual plates.
  • Add the diced peppers and onions to the griddle. Season the vegetables with salt and pepper, and sauté for about 3-4 minutes or until tender.
  • While peppers and onions are cooking, thinly slice the rested steak against the grain. *It's okay if it is a little under-cooked at this point, because you'll be putting the steak slices back on the griddle.
  • Add the sliced steak back to the griddle. Toss the steak and sautéed peppers and onions together to combine. If needed, place the saucepan of cheese sauce on the griddle to warm it back up, stirring occasionally until creamy and melted.
  • Add 2-3 slices of provolone cheese on top of the steak and vegetables and allow to melt. *You can cover with a dome to melt the cheese more quickly if you wish.
  • Transfer the steak, onions, peppers, and melted provolone cheese to the top of the steak fries. Drizzle homemade cheese sauce on top. Top with pickled jalapeno slices, banana peppers, or your favorite loaded french fry toppings and serve.

Notes

  • Skillet and Oven Cooking – You can also cook this recipe inside instead of on an outdoor griddle if you wish.  Simply cook the steak fries in the oven according to package instructions.  While the fries are cooking, saute the peppers and onions in a large skillet over medium heat.  Transfer the cooked veggies to a plate, and then sear the steak in the skillet.  Slice the steak thin, and then return to the skillet with the veggies.  In a separate saucepan, make the homemade cheese sauce.  Then, build the cheesesteak fries.
