Chicken: You can use chicken breasts or boneless skinless thighs. The key is cutting your pieces uniformly so they cook at the same rate. Smaller pieces = faster cook time. Chicken breasts are less forgiving because they have a lower fat content and can dry out easily if overcooked. So for juicy chicken without the fuss, use chicken thighs.

BBQ Rub: Use your go-to seasoning blend. We used our own ‘Que That BBQ Rub and Seasoning, but any quality barbecue rub you love will get the job done.

BBQ Sauce: Pick a sauce with some body to it — something that will reduce and cling to the chicken rather than just sliding off. Keep in mind that BBQ sauce is loaded with sugar, so it’ll caramelize fast on a hot griddle. Stay alert. We used Traeger ‘Que Barbecue Sauce for this chicken bites recipe.

How to Make BBQ Chicken Bites on the Blackstone

Step 1: Season and Marinate – Dice your chicken into bite-sized pieces and toss them in a bowl with 2 tablespoons of oil and about 3 tablespoons of your BBQ rub. Mix well to coat every piece, cover, and refrigerate overnight. This step isn’t strictly required, but that overnight marinate makes a serious difference — the seasoning penetrates deeper and you get way more flavor in every bite.

Step 2: Preheat the Griddle – Heat up your Blackstone or other griddle on medium heat – you’re aiming for about 425-450°F. This higher griddle temperature is what gives the chicken that beautiful crust on the outside while keeping the inside juicy.

Step 3: Cook the Chicken – Add a small amount of high-heat cooking oil to the griddle, and lay your chicken pieces out in a single layer, giving each piece its own landing zone. Let the chicken sear undisturbed — resist the urge to push it around. When it releases easily and has a nice char on one side, flip it. That crust is exactly what you want: it helps the BBQ sauce cling to the chicken bites.

Step 4: Add the BBQ Sauce – Once the chicken is cooked through, turn the griddle down to low. Move the chicken to a cooler zone and start adding your barbecue sauce. Toss the chicken in the sauce quickly — BBQ sauce burns fast thanks to all that sugar. Keep things moving and use a calm spot on the griddle to reduce the sauce around the bites without scorching. Total time on the griddle: under 15 minutes.

Step 5: Serve and Enjoy – Pull those sticky, saucy chicken bites off the griddle and serve immediately. They’re great over alongside some buttered griddle corn for a complete family meal. Or add them to a quesadilla or serve on a bun for a barbecue chicken sandwich.

Ingredients
  

  • 4 boneless skinless chicken breasts about 1½ – 2 lbs
  • 3 tablespoons high-heat cooking oil divided
  • 3-4 tablespoons 'Que That Barbecue Rub and Seasoning or your favorite BBQ seasoning
  • ½ – ¾ cup barbecue sauce

Instructions

  • Dice chicken into uniform 1-inch bite-sized pieces.
  • In a bowl, combine chicken, 2 tablespoons oil, and BBQ rub. Mix well to coat. Cover and refrigerate overnight (or at least 2 hours).
  • Preheat your griddle on medium to about 425-450°F. Add about 1 tablespoon of high-heat cooking oil to the griddle surface, and spread it around with your spatula.
  • Place the chicken pieces on the oiled griddle in a single layer, spacing them out. Cook the chicken undisturbed for about 4-5 minutes, or until a golden crust forms on the first side and the chicken releases from the griddle easily.
  • Flip and cook the other side for another 3–4 minutes until almost cooked through (internal temp of about 160°F).
  • Turn griddle to low and move chicken to a cooler zone. Pour BBQ sauce over chicken and toss quickly to coat. Continue cooking on the cooler side of the griddle until chicken is cooked through (this should only take 1-2 minutes more).
  • Remove BBQ chicken bites from griddle and serve immediately.

Notes

  • Using BBQ sauce on the griddle – Sugar burns. Move quickly once the sauce hits the griddle, and use a low-heat zone as your safe spot. Once you plate the chicken, scrape and clean your flat top while it’s still warm. The sauce is much easier to clean off before it cools and hardens.
