Buffalo Chicken Smash Tacos

- 1 lb ground chicken
- 1 cup shredded mozzarella cheese
- 2 teaspoons Spice That Jalapeño All-Purpose Seasoning
- 1 egg beaten
- 1 tablespoon mayonnaise
- 8 street taco-sized flour tortillas
- 1 tablespoon high-heat cooking oil like avocado oil
- ½ cup buffalo sauce your favorite bottled brand
- ½ cup crumbled blue cheese
- 1 cup shredded lettuce
- 1 small tomato diced
- ranch dressing for serving
Preheat griddle to medium heat, about 400-425°F. Add about ½ to 1 tablespoon oil and spread it around with your spatula.
In a medium bowl, combine the ground chicken, shredded mozzarella, Spice That Jalapeño seasoning, beaten egg, and mayonnaise. Mix until well incorporated; do not overwork.
Portion out about ¼ cup of the chicken mixture onto each flour tortilla. Press the chicken mixture out in a thin, even layer, spreading almost to the edge.
Place tortillas meat-side down on the heated griddle, and cook undisturbed for 3-4 minutes, or until the chicken is almost to 165℉ internal temperature.
Flip to the tortilla side. Brush the cooked chicken with about ½ to 1 tablespoon buffalo sauce, and continue cooking until the chicken reaches 165°F internal temperature and the tortilla is golden brown.
Remove from the griddle and top each taco with crumbled blue cheese, shredded lettuce, and diced tomato. Drizzle with additional buffalo sauce if you wish.
Serve immediately with ranch dressing on the side for dipping.
