Easy Barbecue Brisket Quesadillas

This brisket quesadilla on the griddle is loaded with barbecue flavor and cheesy goodness. Made with leftover smoked barbecue brisket, pepper jack cheese, red onions, and a few other simple barbecue ingredients, this griddle quesadilla will be your new favorite thing to make with your leftover barbecue meats!

Ingredients

  • 2 cups leftover brisket chopped
  • 1/4 cup barbecue sauce
  • 2 burrito sized flour tortillas
  • 1 tablespoon butter
  • 6 oz. sharp cheddar cheese shredded
  • 6 oz. pepper jack cheese shredded
  • 1 green onion sliced
  • cilantro rough chopped
  • bread and butter pickles
  • pickled red onions or raw thinly sliced red onions

Instructions

  • Add chopped brisket (or other cooked barbecue meats) to the preheated griddle. Pour barbecue sauce on the meat and mix to combine. Allow the meat to heat up on the griddle until it is just warmed through, mixing periodically. Do not overcook your leftover barbecued meat.
  • While the meat is heating up on the griddle, butter one side of each tortilla. Place the tortillas on the griddle, butter side down.
  • Immediately add shredded cheeses to the top of the tortillas, dividing the cheese between the two tortillas. Sprinkle on sliced green onions and cilantro. Add pickles to one half of each tortilla, and add red onions to the other half of each tortilla.
  • Allow the cheese to melt a bit on the open-faced tortillas, then add the heated brisket to one side of each tortilla.
  • Fold each of the tortillas in half to form quesadillas. Cook the quesadillas on the griddle until both sides are a nice golden brown color. Then, transfer the quesadillas to a cutting board or wire rack to cool for approximately 5 minutes so the cheese has a chance to set a bit.
  • Cut brisket quesadillas into triangles and serve!

Notes

If you don't have brisket, you may substitute pulled pork or pulled rotisserie chicken for awesome barbecue quesadillas!
