Bacon Cheeseburger Sliders on the Griddle

These bacon cheeseburger sliders are made using Hawaiian sweet rolls, and the burger is cooked in one giant patty to make feeding a crowd super easy!

Ingredients

  • 1 lb 80/20 ground beef
  • 1/4 sweet onion diced
  • 8 oz. bacon
  • 1 pack of 12 King's Hawaiian sweet rolls
  • burger seasoning of your choice
  • 5 slices American cheese
  • mayonnaise or butter for toasting the rolls

Instructions

  • Preheat your outdoor griddle on low.
  • When the griddle is preheated, add sliced bacon and begin to cook. As the bacon cooks, it will produce fat. Move the bacon to the side of the griddle to continue cooking, and use the bacon fat to cook the diced onions.
  • While the bacon and onions are cooking, prep the ground beef. Place the ground beef on a sheet tray lined with wax or parchment paper. Press and/or roll the beef into a rectangular shape slightly larger than the shape of the sheet of Hawaiian rolls. Set the ground beef patty to the side.
  • Cut the sheet of Hawaiian rolls in half horizontally, so you have a top and bottom "bun" for each slider. Set to the side.
  • When the onions are almost done cooking, season them with your favorite burger seasoning and position them into a rectangular shape about the same size as your burger patty.
  • Carefully flip the burger patty on top of the cooked onions on the griddle.
  • Allow the ground beef patty to cook on the first side in the sautéed onions until the meat is over halfway cooked through and a slight crust develops, then flip the patty to the second side.
  • While the burger patty is cooking, spread mayonnaise or butter on the cut side of both "sheets" of Hawaiian rolls. Then, toast the rolls cut side down on the griddle. When the sheets of rolls are toasted to your liking, remove from the griddle.
  • Top the burger patty with American cheese (or substitute cheese of your choice) and allow the cheese to melt and the burger to cook through.
  • When the cheeseburger patty is cooked through, use two griddle spatulas to carefully transfer the whole patty to the bottom side of the toasted Hawaiian rolls.
  • Chop the cooked bacon and sprinkle on top of the cheeseburger patty.
  • Add the top sheet of Hawaiian rolls to the bacon cheeseburger patty.
  • Use the score marks of the Hawaiian rolls to cut the bacon cheeseburger patty into individual sliders. Serve immediately with your favorite burger toppings.
